Fossil Shell Flour, also known as diatomaceous earth (food-grade, of course!), adds a subtle nutritional edge—without compromising on flavour or texture. The result? Ingredients

  • ½ cup coconut flour
  • 1 tbsp Fossil Shell Flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ¼ cup honey
  • ¼ cup coconut oil (melted)
  • 1 tsp vanilla extract

 

Instructions

  1. In one bowl, mix together all the dry ingredients: coconut flour, Fossil Shell Flour, baking soda, and salt.
  2. In a separate bowl, whisk together the wet ingredients: eggs, honey, coconut oil, and vanilla extract.
  3. Combine the wet and dry mixtures until a dough forms. It will be slightly sticky—that’s perfect.
  4. Scoop the dough into small rounds and place them on a lined baking tray. Flatten slightly.
  5. Bake at 180°C for around 12 minutes, or until the edges are lightly golden.
  6. Let cool on the tray before serving.

Optional (but highly recommended): Drizzle with melted dark chocolate once cooled for a more indulgent treat.
