  1. Begin by cooking the Thai rice noodles in boiling water according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet or wok, heat a dash of extra virgin olive oil over medium-high heat.
  3. Add the chopped chicken breast to the skillet and cook until browned and cooked through. Once cooked, remove the chicken from the skillet and set aside.
  4. In the same skillet, crack the eggs and scramble them until cooked through. Then, return the cooked chicken to the skillet along with half of the sliced shallots.
  5. Add the cooked noodles to the skillet with the chicken and shallots.
  6. In a small bowl, whisk together the tamarind puree, brown sugar, fish sauce, and oyster sauce to make the sauce.
  7. Pour the sauce over the chicken and noodles in the skillet, tossing everything together until well coated.
  8. Squeeze the juice of half a lime over the chicken pad thai and sprinkle with chopped peanuts and chili flakes. Mix everything together until evenly combined.
  9. Serve the Chicken Pad Thai hot, garnished with the remaining sliced shallots and a quarter of lime on the side for an extra burst of freshness.
