Beef Bone Broth Mashed Potatoes
This simple side dish uses beef bone broth in place of some of the usual milk or cream for a savoury finish. Adjust the seasoning to taste and serve warm with your favourite main meal.
Ingredients
- 1 kg potatoes, peeled and chopped
- 1/2 cup beef bone broth
- 2 tablespoons butter
- 1/4 cup cream or milk, plus extra if needed
- Salt and cracked pepper, to taste
- Optional: chopped parsley or chives
Method
- Place the potatoes in a large saucepan, cover with cold water and add a pinch of salt.
- Bring to the boil, then simmer until the potatoes are tender when pierced with a fork.
- Drain well and return the potatoes to the warm pan for one minute so excess moisture can evaporate.
- Warm the beef bone broth, butter and cream in a small saucepan or microwave-safe jug.
- Mash the potatoes, gradually adding the warm liquid until the texture is smooth and creamy.
- Season to taste and finish with herbs if using.
